Bus Trip “Brown Bag” Lunch Recipe

Looks like we’ve started a new WSCO tradition – first a requested recipe from the picnic in the last issue of DT and now one from the bus trip – enjoy!

Carole Edwards Haley’s Oklahoma Caviar (bean salad)

2 cans (15 oz.) black-eyed peas or black beans or kidney beans or combination, drained and rinsed

 

˝ cup purple onion, chopped                                     4 green onions, chopped

1 can (15.5 oz.) corn, drained

 

2 garlic cloves, minced

1 can (14 oz,) diced tomatoes, drained

 

1 jalapeno, chopped

1 green sweet pepper, chopped

 

1 cup Kroger fat-free zesty Italian salad dressing

 

 

 

 Mix together all ingredients.  Refrigerate at least 2 hours.  Serve undrained, as a salad, or drained as a dip with scooper corn chips.

WSCO is proposing two trips for autumn, 2008, and the board needs to know in the near future if there is enough interest from the membership to go forward with plans.

5th Annual Bus Tour – initial plans for this day-trip are for Sunday, Aug. 31, and include as the main events the wonderful Venedocia, Ohio, Gymanfa and a visit to the Welsh museum in Gomer.  We will be scheduling a “late start” leaving Columbus – noon or 1 pm -- since we will be returning after the evening Gymanfa.  The cost would be around $40 plus meals, with dinner at the church supper in Venedocia.

Custom Two Week Tour of Wales from the north to the south – private motor coach, medieval banquet, Welsh Folk Museum, Welsh National Gallery, a male voice chorus practice, church service in Welsh, visit a working farm, see the new waterfront development in Cardiff, special accommodations, and the treasures of Wales.  Cost will be no more than $4,000 per person for a 2-week trip, including airfare, lodging, tour bus, guide, breakfasts, and some dinners.

Indicating your interest in either or both trips at this time carries no commitment, but we must know how many people have a strong interest in order to make a decision at the March board meeting.
